gluten free hot chocolate brownies

Gluten free hot chocolate brownies topped with a creamy marshmallow fluff. These are made with Reishi Hot Cacao mix and they leave you feeling pretty zen after you eat them.

Ingredients
  

Gluten Free Hot Chocolate Brownies

  • ¼ cup butter
  • ¾ cup chocolate chips I used dark chocolate
  • ¾ cup vegetable oil
  • 1 cup sugar
  • 4 eggs room temp
  • 1 tsp vanilla
  • ½ cup hot chocolate mix I used It's Blume Reishi Hot Cacao Mix
  • ¼ cup gluten free flour loosely scooped, I use bob's red mill
  • ½ tsp baking powder
  • ½ tsp salt

Marshmallow Fluff

  • 6 cup mini marshmallows
  • ¼ cup butter

Instructions
 

Gluten Free Hot Chocolate Brownies

  • Preheat oven to 350 degrees F. Line a 8x8 baking dish with parchment paper, set aside.
  • Melt butter and chocolate chips in the microwave or stovetop. Add to a large bowl, add sugar, vegetable oil, eggs and vanilla and mix until combined. Add in Reishi Hot Cacao Mix, flour, baking powder and salt, mix until just combined. 
  • Pour into lined baking pan and bake for 30 - 35 minutes or until done. I prefer my brownies a little fudgier, so I take them out when there is still a little bit left on the toothpick.
  • Once baked, let rest in pan for 10-15 minutes, then remove from baking dish and let cool completely.

Marshmallow Fluff

  • Add marshmallows + butter to a bowl and microwave at 30 second increments until fully melted. Whisk until combine and top brownies with them.
  • Note - these brownies are best served at room temperature. You may be tempted to eat them warm but I promise you they will be worth the wait!
