Cajun cod + lemon parmesan asparagus is a great weeknight dinner! It's quick and easy and packed with flavour.

Cajun Cod
- 2 cod filets
- 2 tbsp cajun seasoning see notes for recipe or use pre mixed
- olive oil
- ¼ cup white wine optional
- ½ cup heavy cream optional
Lemon Parmesan Asparagus
- 1 bunch asparagus
- 1 lemon zested + juiced
- ¼ cup parmesan cheese grated
- olive oil
- salt + pepper
Cajun Cod
Preheat cast iron or frying pan over medium heat, drizzle in olive oil.
Pat cod filets dry and generously season with cajun seasoning. Add to pan and cook for 3-4 minutes per side. It should have a nice sear on either side. Once cooked remove from heat and set on a plate.
Optional pan sauce; without cleaning the pan, remove from heat and add white wine. Place back on the heat and whisk. Add in heavy cream and whisk again. Bring to a simmer and let cook until sauce reduces and thickens. Serve with cod.
Lemon Parmesan Asparagus
Preheat oven to 400 degrees F. Drizzle a baking sheet with olive oil. Add asparagus, lemon juice, zest from 1/2 a lemon, grated parmesan, salt + pepper. Cook for 10 minutes. Serve with cod.
