cajun cod + lemon parmesan asparagus

Cajun cod + lemon parmesan asparagus is a great weeknight dinner! It's quick and easy and packed with flavour.

Ingredients
  

Cajun Cod

  • 2 cod filets
  • 2 tbsp cajun seasoning see notes for recipe or use pre mixed
  • olive oil
  • ¼ cup white wine optional
  • ½ cup heavy cream optional

Lemon Parmesan Asparagus

  • 1 bunch asparagus
  • 1 lemon zested + juiced
  • ¼ cup parmesan cheese grated
  • olive oil
  • salt + pepper

Instructions
 

Cajun Cod

  • Preheat cast iron or frying pan over medium heat, drizzle in olive oil.
  • Pat cod filets dry and generously season with cajun seasoning. Add to pan and cook for 3-4 minutes per side. It should have a nice sear on either side. Once cooked remove from heat and set on a plate.
  • Optional pan sauce; without cleaning the pan, remove from heat and add white wine. Place back on the heat and whisk. Add in heavy cream and whisk again. Bring to a simmer and let cook until sauce reduces and thickens. Serve with cod.

Lemon Parmesan Asparagus

  • Preheat oven to 400 degrees F. Drizzle a baking sheet with olive oil. Add asparagus, lemon juice, zest from 1/2 a lemon, grated parmesan, salt + pepper. Cook for 10 minutes. Serve with cod.
