parmesan + garlic lobster pasta

Creamy parmesan + garlic lobster pasta is a great special occasion (or anytime) dinner! It's loaded with parmesan, white wine and lobster...where can you go wrong?

Poached Lobster
- 2 ½ cups white wine a dry white
- ¼ cup salted butter
- 2 lobster tails
Pasta
- ¼ cup butter
- 6 garlic cloves minced
- ¼ cup white wine
- 1 cup heavy cream
- ¼ cup pasta water
- ¼ cup poaching liquid
- ¾ cup parmesan cheese grated
- 1 tsp red pepper flakes
- 1 cup green peas optional
- 1 box gluten free spaghetti sub regular
- kosher salt to taste
Poached Lobster
Add white wine and butter to a heavy bottom pot. Bring to a boil, reduce heat and add lobster tails. Simmer for 5-8 minutes or until tails curl slightly and turn bright in colour. Remove from liquid and set aside. Reserve ⅓ cup of poaching liquid for sauce.
Remove tails from shell and cut into cubes.
Pasta
Bring a pot of heavily salted water to a boil and cook spaghetti according to box. Reserve ¼ cup of starchy pasta water for sauce. Drain the pasta and set aside.
In a pan over medium heat melt butter, add garlic and cook for 1-2 minutes or until fragrant. Add white wine, heavy cream, pasta water, poaching liquid and grated parmesan cheese and simmer for 10-15 minutes or until sauce comes together and is slightly thickened. Add green peas (if using) and stir to combine.
Toss pasta in sauce. Serve with lobster on top, top with additional parmesan.
