Ingredients
  

Spicy Ground Pork

  • 1 tsp peanut oil can sub sesame oil, canola oil or any other neutral oil
  • 1 lb ground pork I recommend truLocal pork
  • 2 tsp ginger grated
  • 2 garlic cloves minced
  • 1 tbsp brown sugar
  • 3 tbsp soy sauce sub tamari sauce
  • 2 tsp sriracha
  • 1 tsp chili flakes
  • 1 tsp hoisin sauce

Peanut Butter Sauce

  • 1 cup peanut butter smooth or crunchy
  • 3 tbsp soy sauce sub tamari sauce
  • 2 limes juiced
  • 3 garlic cloves
  • 1 tbsp ginger
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 tsp maple syrup
  • ½ tsp cayenne pepper
  • ¼-⅓ hot water
  • cilantro optional

Additional

  • 1 pkg vermicelli rice noodles thick
  • 1 cup cucumber sliced
  • 1 jalapeno sliced
  • ¼ cup cilantro chopped
  • salted peanuts chopped

Instructions
 

  • In a large pot, fill with water and bring to a boil. Once boiling add in your rice vermicelli and cook for 3-5 minutes or until tender. Drain. Return to your pot and toss with a small amount of neutral oil (optional) and then set aside.

Spicy Ground Pork

  • In a skillet over medium high heat, add your peanut oil, minced garlic + minced ginger, sauté for a minute. Add in your ground pork and cook for 3-5 minutes or until almost cooked through. Remove any excess oil.
  • Add in your brown sugar, soy sauce, sriracha, chili flakes + hoisin sauce, mix until combined and well coated. Cook for an additional 2-3 minutes or until pork is cooked through. Set aside.

Peanut Butter Sauce

  • In either a food processor, blender or using a hand mixer, add all of your ingredients except for the water and blend until well combined. Once combined, slowly pour in your water while mixing in a constant slow stream until the sauce is well combined and smooth. You may not need the full 1/3 cup, so start with a 1/4 cup and add more if necessary. Make sure the water is hot as it will mix better and create a smoother consistency.

Assembly

  • For assembly you can either serve the noodles in a bowl topping it with the sauce, the ground pork, cilantro, cucumber, jalapeños + peanuts. You can also combine the sauce, pasta and ground pork together in a pot first and then add your toppings if you want a more even coating of sauce.
  • This recipe makes 6-8 servings give or take, depending on your prefered serving size! Enjoy!
