Want to know the secret ingredient to this stuffing that makes it out of the park good? Raisin bread. Yep, raisin bread. The reason for this is that raisin bread has just the right amount of sweetness to it that it compliments the savory aspects of the dish. The things like rosemary, onions, thyme + vegetable stock, the hint of sweetness balances it out so well. Raisin bread also has a hint of cinnamon in it, which just adds the extra little umf that just blends the whole thing together. I highly recommend little northern bakehouse for gluten free bread. It holds up the best and doesn’t turn into mush.
apples + pears are basically a match made in heaven. they compliment this dish so well. similarly to the cinnamon raisin bread, the apples and pears add an additional little hint of sweetness. since I primarily make the stuffing in the fall/winter, I typically collect my apples + pears from a local farm, right off the tree.
You can make this stuffing in a glass baking dish or in a lodge cast iron skillet. I personally prefer the cast iron, because it gives the edges a bit of a toasting. So you get crunch on the outside and softer in the middle. To me, that’s the best kind.
I find this goes best with a full thanksgiving dinner, equipt with turkey, potatoes, yorkshire puddings, gravy + vegetables. But hey if that’s not your vibe, then make it on its own or honestly just for a weeknight dinner.

gluten free apple + pear stuffing
Ingredients
- 2 loaves cinnamon raisin bread gluten free or regular
- ½ cup butter
- 2 pears cubed
- 3-4 apples cubed
- 2 onions diced
- 2-3 celery stalks diced
- 1 cup dried cranberries
- 3 tsp dried sage
- 2 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp dried parsley
- 2-3 cups vegetable stock start with 2 and add more in necessary
- salt to taste
Instructions
- Preheat oven to 350 degrees F. If you are using a baking pan, make sure to grease it and set aside. If you are using a cast iron pan, then place on stovetop over medium heat.
- Cut the 2 loaves of bread into cubes, place on a baking sheet and bake at 350 for 10-20 minutes or until slightly toasted. You want the bread just slightly dried out, but not too dry. Once dried out, cut or tear into 1" cubes and place into a large bowl.
- Melt butter in cast iron pan, cook down onions + celery until translucent. Add seasonings, cook for 1-2 minutes more.
- Add pears + apples to cast iron pan, cook for 5 minutes or so, until soft and mixture looks well combined. Add salt if needed.
- Add vegetable stock to mix and cook for about a minute. If you like a softer stuffing, add more stock, if you like a drier stuffing, go with less.
- Pour mixture into bread bowl, mix until well combined. If your mixture is too dry, add in additional vegetable stock.
- If you are baking the stuffing in a baking pan, pour mixture into pan and pat down until top is fairly even.
- If you are baking the stuffing in a cast iron pan, pour your mixture into pan and pat down until top is fairly even.
- Bake for 45-55 minutes or until the top is golden brown.
