oh man oh man these cajun shrimp tacos + pineapple salsa are so good!! they’re so easy to make and a fan favourite. the warm grilled pineapple salsa mellows out the spicy shrimp so well. bonus; they’re a one pan dish which means easy clean up!

how to: cajun shrimp tacos + pineapple salsa

These one pan cajun shrimp tacos + pineapple salsa are so easy to make you’ll wonder why you didn’t make them sooner.

Step 1: Preheat oven to 400 degrees F. Drizzle olive oil on a baking sheet, add onions and red peppers, toss to coat. Bake for 7-10 minutes.

step 2: Meanwhile, clean shrimp and toss with olive oil and cajun seasoning.

Step 2: After your peppers and onions have baked for 7-10 minutes, add your shrimp. bake for an additional 7-10 minutes or until shrimp have begun to curl and turn red/orange. Remove from oven and set aside.

grilled pineapple salsa

the grilled pineapple salsa compliments the cajun shrimp really well and gives the overall dish a touch of sweetness. grilling the pineapple is optional but recommended!

step 1: Preheat grill to 400 degrees F. Cut pineapple into rounds and grill for 10-15 minutes or until the pineapple has softened and has a nice char.

step 2: While hot, cut pineapple into cubes and add to a large bowl. Add in jalapeños, onion, cilantro, lime juice + kosher salt. Mix until well combined. Let rest for 5-10 minutes.

this crema is just *chefs kiss* i add it to every single taco i make, truly, every one. even my breakfast tacos loaded with scrambled eggs. it compliments a taco so well, it would be a crime if you didn’t make it. it also stores super well in the fridge for a week or so!

step 1: In a small bowl add sour cream, mayo, cilantro, juice + zest of 1 lime + kosher salt. Mix well to combine and serve on fajitas.

These one pan cajun shrimp tacos + pineapple salsa are a crowd favourite. The sweet pineapple salsa mellows out the spice from the cajun seasoning and will have everyone coming back for seconds.

Ingredients
  

Cajun Shrimp

  • 2 pkg shrimp or about 20-25 tails
  • 2 tbsp cajun seasoning see notes for recipe or use pre mixed
  • 1 onion sliced
  • 1 red pepper sliced
  • 1 tbsp olive oil

Pineapple Salsa

  • 1 pineapple grilled
  • 1 jalapeño diced
  • ½ purple onion diced
  • ¼ cup cilantro chopped
  • 1 lime juiced
  • kosher salt to taste

Cilantro Lime Crema

  • 1 lime juiced + zested
  • ¼ cup mayonaise
  • ¼ cup sour cream
  • 1 tbsp cilantro chopped
  • kosher salt to taste

Additional

  • corn tortillas
  • sour cream or cilantro lime crema
  • avocado
  • lime juice
  • cilantro

Instructions
 

Cajun Shrimp

  • Meanwhile, clean shrimp and toss with olive oil and cajun seasoning. Add to baking sheet with onions and red peppers and bake for an additional 7-10 minutes or until shrimp have begun to curl and turn red/orange. Remove from oven and set aside.

Grilled Pineapple Salsa

  • Grilling the pineapple is optional but recommended!
  • Preheat grill to 400 degrees F. Cut pineapple into rounds and grill for 10-15 minutes or until the pineapple has softened and has a nice char.
  • While hot, cut pineapple into cubes and add to a large bowl. Add in jalapeños, onion, cilantro, lime juice + kosher salt. Mix until well combined. Let rest for 5-10 minutes.

Cilantro Lime Crema

  • In a small bowl add sour cream, mayo, cilantro, juice + zest of 1 lime + kosher salt. Mix well to combine and serve on fajitas.

Assemble

  • Over a gas stove toast corn tortillas or in a very hot pan heat until they begin to puff. Remove from heat.
  • Assemble fajitas with shrimp, peppers + onions, fresh avocado, grilled pineapple salsa, lime juice, sour cream or crema and cilantro. Serve.
