one pan cajun chicken pasta is creamy, super simple, low effort and ready under 40 minutes. It’s the ultimate comfort dish, especially heading into winter! it’s great as a quick throw together thats super filling and is even better the next day. the pasta is on the spicy side so it pairs really well with a white wine!

tips and tricks: one pan cajun chicken pasta edition

This dish is super simple and making it in one pan gives you the *luxury* of less dishes. we love that over here.

the first thing you do in this dish is prep your chicken into cubes and toss is in the cajun seasoning to let them marinate for a bit while you prep your veggies. typically, the perk of this is that it enhances the flavour the longer you leave it, that still applies with this pasta. however, you add additional seasoning while cooking, so the flavour will always come through even if you don’t have much time to let it marinate.

cooking the onions, peppers, tomatoes and garlic in the leftover seasoning in the pan also enhances that spicy cajun flavour and gives your veggies a chance to absorb some of that.

the pasta will look really creamy once its done cooking, if you want it to firm up slightly, take it off the stove when its done cooking and let it sit for 2-5 minutes. the starch from the pasta will help to firm up the sauce.

Ingredients
  

  • 2 chicken breast boneless + skinless, cut into 1" cubes
  • 3 tbsp cajun seasoning see notes for recipe* or use pre mixed
  • 1 onion sliced
  • 1 red pepper sliced
  • 3 garlic cloves minced
  • 2 plum tomatos diced
  • 2 cup chicken broth sub stock
  • 2 cup gluten free penne sub regular
  • 1 cup heavy cream /whipping cream
  • ½ cup feta cheese
  • ¼ cup parmesan cheese shredded
  • fresh basil chopped

Instructions
 

  • Preheat olive oil in a cast iron or frying pan over medium heat.
  • Mix chicken breast cubes with 2 tbsp of cajun seasoning and add to pan. Cook for 5-8 minutes or until slightly golden, remove from pan.
  • Without cleaning the pan, add in red peppers and onions. Cook for 3-5 minutes or until onions become slightly translucent. Add in plum tomatoes + minced garlic and cook for another 2 minutes. Add chicken, uncooked penne, chicken broth, whipping/heavy cream and the remaining 1 tbsp of cajun seasoning. Mix well until it's well combined.
  • Cover with a lid and bring to a boil, once it has reached a boil, reduce heat and let simmer. Cook for 7-10 minutes or until pasta is cooked through.
  • Once penne is cooked add in feta and parmesan cheese, mix until well combined, remove from heat and top with chopped basil. Serve.
