cajun cod + lemon parmesan asparagus is the perfect weeknight dinner when you want something easy, healthy and perfect for lunch the next day. i’m not a huge fan of seafood and i loved this dish! the cajun seasoning pairs perfectly with the mildly sweet cod.
how to: cajun cod + lemon parmesan asparagus
the method for making this dish is really simple and you can pretty much have it ready in 30 minutes or less!
step 1: Pat cod filets dry and generously season with cajun seasoning. Let these sit for a minimum of 20 minutes, the longer you let the seasoning sit, the strong the flavour will be, you can even prep them the day before or the morning of and let the chill in the fridge until you’re ready to use them.
step 2: Preheat cast iron or frying pan over medium heat, drizzle in olive oil.
step 3: Add cod to the pan and cook for 3-4 minutes per side. It should have a nice sear on either side. Once cooked remove from heat and set on a plate.
step 4: Optional pan sauce; without cleaning the pan, remove from heat and add white wine. Place back on the heat and whisk. Add in heavy cream and whisk again. Bring to a simmer and let cook until sauce reduces and thickens. Serve with cod. This sauce is completely optional but its a great way to use up anything left in the pan and gives you a great sauce to use if you want a creamier dish!
for the lemon parmesan asparagus: Preheat oven to 400 degrees F. Drizzle a baking sheet with olive oil. Add asparagus, lemon juice, zest from 1/2 a lemon, grated parmesan, salt + pepper. Cook for 10 minutes. Serve with cod. Its that simple!

- ½ cup heavy cream optional

- 1 lemon zested + juiced
- ¼ cup parmesan cheese grated
- olive oil
- salt + pepper
