wow oh wow!! this chicken satay + peanut butter sauce is honestly one of my favourite recipes, but i mean how can you not love chicken satay?! the recipes is really simple and the hardest part is putting the chicken on the skewers…but its worth every minute.
how to: chicken satay + peanut butter sauce
this recipe is really so simple, there are barely any steps, really, theres 3 steps;
step 1: In a large bowl or ziplock, combine coconut milk, soy sauce, brown sugar, curry powder, minced ginger, minced garlic, lime juice, sesame oil, fish sauce + tumeric.
step 2: Clean and cut chicken into 1.5″ cubes, add it to marinade. Let sit in the fridge for 4 hours – overnight.
step 3: When ready to cook, preheat grill to 375 degrees F. Place chicken cubes on skewers and grill for 7 – 10 minutes or until cooked through.
for the peanut butter sauce, it couldn’t be more simple, combine all your ingredients in a bowl and serve it either on top or with your chicken!

chicken satay + peanut butter sauce
Ingredients
Chicken Satay
- 4 chicken breast boneless + skinless, cut into large cubes
- ¼ cup coconut milk
- 2 tbsp soy sauce sub tamari
- 1 tbsp brown sugar
- 1 tbsp curry powder
- 1 tbsp ginger minced
- 2 garlic cloves minced
- 1 lime juiced
- 1 tsp sesame oil
- 1 tsp fish sauce
- ½ tsp turmeric
Peanut Butter Sauce
- ½ cup peanut butter creamy or crunchy
- 1 lime juiced
- 2 garlic cloves minced
- 2 tsp ginger minced
- 2 tbsp soy sauce sub tamari
- 1 tbsp rice wine vinegar
- 2 tsp sesame oil
- 1 tbsp maple syrup
- 1 tbsp pickled jalapeños chopped
- 1 tbsp cilantro chopped
- 1 tsp cayenne + chilli powder
Instructions

- In a large bowl or ziplock, combine all ingredients from chicken satay section.

- When ready to cook, preheat grill to 375 degrees F. Place chicken on skewers and grill for 7 – 10 minutes or until cooked through. The chicken should be tender and have a few char marks on them.
Peanut Butter Sauce
- Combine all ingredients in a bowl. Serve with chicken.
