Gluten free hot chocolate brownies are made with It’s Blume Reishi Hot Cacao mix. I call them my PMS brownies. The reason I call them PMS brownies is because of the calming effects of the Reishi mushroom (yes, you can have your brownies and eat your vegetables too, but you won’t even know it) So they’re the perfect brownie for that time of the month.
Reishi mushrooms are used to help enhance the immune system, reduce stress, improve sleep, and lessen fatigue – so you really cannot go wrong with making these. Not to mention you can have them ready in about 40 minutes!

The key to these brownies is the reishi hot cacao mix. They’re the secret legal shrooms that should be in your cupboard. Reishi mushrooms have so many health benefits that I thought it was only fair to put them into one of my favorite things, brownies. If reishi mushrooms + feeling zen isn’t really your style you can make my gluten free after eight brownies instead. That recipe is my base brownie recipe that you should have handy at all times! The reishi hot cacao mix comes from It’s Blume!
Marshmallow fluff is optional on these! If marshmallows aren’t your thing you can skip them or sub in whipped cream instead! Whipped cream would be amazing on these, topped with a bit of cocoa powder – absolutely amazing.
For the melted chocolate component, I love dark chocolate, I find there is a level of richness that milk chocolate does not have compared to dark. That being said, you can use dark chocolate, milk chocolate, semi sweet, bittersweet or even unsweetened if you are looking for something on the less sweet side.
Note – these brownies are best served at room temperature. You may be tempted to eat them warm but I promise you they will be worth the wait!

Ingredients
Gluten Free Hot Chocolate Brownies
- ¼ cup butter
- ¾ cup chocolate chips I used dark chocolate
- ¾ cup vegetable oil
- 1 cup sugar
- 4 eggs room temp
- 1 tsp vanilla
- ½ cup hot chocolate mix I used It's Blume Reishi Hot Cacao Mix
- ¼ cup gluten free flour loosely scooped, I use bob's red mill
- ½ tsp baking powder
- ½ tsp salt
Marshmallow Fluff
- 6 cup mini marshmallows
- ¼ cup butter
Instructions
Gluten Free Hot Chocolate Brownies
- Preheat oven to 350 degrees F. Line a 8×8 baking dish with parchment paper, set aside.
- Melt butter and chocolate chips in the microwave or stovetop. Add to a large bowl, add sugar, vegetable oil, eggs and vanilla and mix until combined. Add in Reishi Hot Cacao Mix, flour, baking powder and salt, mix until just combined.
- Pour into lined baking pan and bake for 30 – 35 minutes or until done. I prefer my brownies a little fudgier, so I take them out when there is still a little bit left on the toothpick.
- Once baked, let rest in pan for 10-15 minutes, then remove from baking dish and let cool completely.
Marshmallow Fluff
- Add marshmallows + butter to a bowl and microwave at 30 second increments until fully melted. Whisk until combine and top brownies with them.
